Lemon Drizzle Cake & Chocolate Orange Drizzle Cake

Recipe of the week comes from Pamela Kemp

Pamela provided 2 excellent recipes this week, a Lemon Drizzle Cake and also a delicious Chocolate Orange Drizzle Cake

Tomorrow we have our monthly charity event in aid of Cash4Kids.

Staff will be hoping to try out some of  Pamela's recipes



Lemon Drizzle Cake made by Pamela Kemp
Lemon Drizzle Cake

Ingredients
4oz margarine
4oz sugar
2 eggs
4 oz sifted self-rising flour
1/5 teaspoon of baking powder
1 tablespoon milk
1 lemon, juice and the rind
3 tablespoons Castor sugar
Approx. 2 tablespoons Lemon curd

Method

1.Beat margarine and sugar until pale in colour
2. Add 1 egg at the time and mix through
3. Add grated rind of the lemon
4. Add sifted flour and baking powder
5. Add little milk
6. Place the mixture into 2lb loaf tin with greaseproof paper on the bottom
7. Bake Gas 4 for 20-30 mins until a screw comes out clean
 
Topping
1. Place juice of the lemon and caster sugar in small bowl and leave until cake is ready
 
Assemble
1.When cake is cooked, leave in the loaf tin. Pierce with

Vanilla Sponge Cake with Caramel Cream & Chocolate Ganache

Ingredients
For the Cake

225g Self raising flour

1 ½ teaspoons baking powder

1/5 teaspoon baking soda


3 large eggs

225g caster or granulated sugar

172g unsalted melted butter

3 teaspoons vanilla extract

180g Greek style yogurt

150g unsalted butterCaramel butter icing

150g icing sugar

150g nestle caramel condensed milk

Outer frosting

3 large eggs white

200g caster sugar

226g unsalted butter (must be soft)

1 teaspoon vanilla extract

80g nestle caramel condensed milk

Ganache

100ml double cream

150g dark chocolate ( I use Bonville) not too bitter

Optional

3 table spoons apricot jam

6 table spoons brandy

 

Method

Cake

  1. In a mixing bowl combine eggs, sugar, melted butter, vanilla extract and yogurt. Beat until combined.
  2. Sieve in the flour, baking powder and baking soda. Beat until combined.
  3. Divide into 4   7-8” tins. Bake at Gas mark 4 for 20-30 mins.
  4. cool before assembling.

She has done her own take on a No bake Chocolate Cheesecake

This recipe is very rich but worth the making

Ingredients

McVities Chocolate Creams Crust

 2 3/4 cups (369g) McVities Chocolate Creams

5 tbsp (70g) salted butter, melted

Chocolate Cheesecake Filling

24 oz (678g) cream cheese, room temperature

1/2 cup (104g) sugar

3 tbsp natural unsweetened cocoa powder

8 oz semi-sweet chocolate, melted

1 1/4 cups (300ml) Double Cream, cold

3/4 cup (86g) Icing  sugar

1 tsp vanilla extract

 Cream Topping

1 cup (240ml) Double Cream, cold

1/2 cup (58g) Icing  sugar

1 tsp vanilla extract

Lovely decorated with chocolate eggs for Easter.

 

Method

1.            Melt butter, crush biscuits and mix

Strawberry Cheesecake

Pamela has done her own take on a Strawberry cheesecake that comes from the www.bbcgoodfood.com

Ingredients

250g digestive biscuits

100g butter melted

1 vanilla pod

600g cream cheese

100g icing sugar

284ml pot of double cream

For the topping

400g punnet of strawberries, halved

25g icing sugar

Method

  1. To make the base, butter and line a 23cm loose-bottomed tin with baking parchment. Put the digestive biscuits in a plastic food bag and crush to crumbs using a rolling pin. Transfer the crumbs to a bowl, then pour over the melted butter. Mix thoroughly until the crumbs are completely coated. Tip them into the prepared tin and press firmly down into the base to create an even layer. Chill in the fridge for 1 hr to set firmly.
  2. Slice the vanilla pod in half lengthways, leaving the tip intact, so that the two halves are still joined. Holding onto the tip of the pod, scrape out the seeds using
